Vienna, 1 October 2023: Paul Gamauf will take over the kitchen of the EDVARD gourmet restaurant at the Palais Hansen Kempinski Vienna in October. As chef de cuisine, the 34-year-old will be responsible for the culinary line of EDVARD and set new accents in the Michelin-starred restaurant.
‘Modern with a penchant for sustainability and in harmony with nature’ is how the Viennese-born chef describes his culinary style, which he will remain true to in the Michelin-starred EDVARD restaurant. Love of the product is at the centre of Paul Gamauf’s work. Many of his ingredients are collected, pickled, fermented and preserved by himself. His producers are small and hand-picked, with quality and sustainability at the forefront.
Paul Gamauf has demonstrated his affinity for sustainability in the past, for example, in his position as sous chef at the vegetarian-vegan starred restaurant Tian, where he worked for almost eight years before moving to Silvio Nickol at Palais Coburg. Most recently, Paul Gamauf was head chef at the highly acclaimed fine-dining restaurant Kelsen in the Parliament, which closed unexpectedly at the beginning of September.

The EDVARD restaurant at the Palais Hansen Kempinski Vienna, which has been awarded one Michelin star, 17 Gault Millau points and four toques, will be open daily from Tuesday to Saturday from 6:00pm to 10:00pm from 5 October.
