This July, Bangkok gets a little wild – and wonderfully refined – as Chef Josh Raine brings his globally acclaimed pop-up kitchen to Siam Kempinski Hotel Bangkok.
From the hallowed kitchens of Tetsuya’s Sydney, Le Manoir aux Quat’Saisons and Pied à Terre London to a new generation of rule-breaking pop-ups, Josh Raine has cooked with the world’s best – and now he’s cooking on his own terms. Expect big flavours, sharp technique and a touch of cheek. No set format. No white tablecloths. Just bold food, fresh beats and a dinner vibe where the only rule is, enjoy yourself.
In Bangkok, Raine will present a globally inspired tasting menu that weaves together his British roots, French finesse and a vibrant Japanese soul. From the umami depth of nori and mushroom dashi to the bright tang of sudachi and the earthy warmth of wattleseed and eucalyptus, each course is crafted using freshly sourced ingredients and shaped by Raine’s culinary journey and focus on sustainability.
This isn’t just dinner – it’s a story told plate by plate, powered by craftsmanship and Raine’s signature edge.
About Chef Josh Raine
British-born Chef Josh Raine honed his craft in some of the world’s most revered kitchens. He began at the legendary Le Manoir aux Quat’Saisons, the two-Michelin-starred countryside retreat founded by Raymond Blanc and known for nurturing icons such as Marco Pierre White, Heston Blumenthal and Michael Caines.
He then sharpened his skills at Pied à Terre London, one of the city’s most respected Michelin-starred restaurants, renowned for launching the careers of Tom Aikens and Shane Osborn. In Australia, Raine led Brisbane’s Urbane Restaurant to a prestigious three-hat award from the Australian Good Food Guide. In 2018, he was appointed executive chef at Tetsuya’s, where he helped secure its ranking among La Liste 1000’s World’s Best Restaurants.
Since then, he has launched 40Res, a cult wine bar in Sydney’s Surry Hills, and Canvas, the restaurant at the Museum of Contemporary Art. spot of RAINE is his bold, unfiltered pop-up series – and now, for the first time, it lands in Bangkok.
