The new signature dish
Kitzbuehel/Jochberg, 15. April 2014 - The main ingredient consists of lamb form a local farmer, living next door to the hotel.
The product is absolutely organic. The loin, the tongue and the sweetbread are used for this dish, accompanied with traditional Austrian side dishes.
The lamb is at home on the mountain with1800 m in the Kitzbühel Alps. The Sheppard Hermann, inhabitant of Jochberg, takes care with lots of love ofthe sheep, and even the head chef himself visits the natural living environment of the sheep to check its high quality standards. The nutrition of the sheep used only consists of juicy grass and fresh mountain water.
This dish is not using only the “most popular pieces” out of the lamb, it prepares the tongue to a “ragout” and the sweetbread to a “praline” which is baked in breadcrumb. It takes the best out of the product and serves it in a creative way.
