For the 30th anniversary of Hotel Baltschug Kempinski Moscow, chef Andrey Kagokin has created a special anniversary menu of the most popular dishes that have been served at the hotel since its opening.

Since the hotel's opening, talented chefs from various countries and continents have been creating culinary wonders for three decades. Each of them has brought their own experience of haute gastronomy and author's recipes based on international and Russian culinary traditions to the Baltschug kitchen. Gastronomic trends and preferences have changed, cooking techniques have been improved, and classic recipes have been enriched with new flavours.

"We cherish our culinary heritage, " – says Andrei Kagokin. – "Baltschug cuisine has always been famous not only for a variety of gastronomic masterpieces, but also for its exquisite presentation. In the anniversary menu, we have tried to recreate time-tested recipes with a modern twist."

The new menu gives a new twist to the bestsellers of the last 30 years:

  • Olivier salad with crayfish tails and red caviar (RUB 1,100)
  • Vareniki with suluguni cheese, morels and tofu cheese (RUB 1,250)
  • Surf & Turf – beef fillet and langoustines with asparagus (RUB 2,500)
  • Tournedos Rossini with foie gras and green beans (RUB 2,900)
  • Pasta "Alaska" with shrimps and red caviar (RUB 1,500)
  • Fried monkfish with Provençal vegetables (RUB 1,600)
  • Berlin-style potato soup with pork sausages (RUB 750)
  • Dessert "Kaiserschmarrn" with vanilla ice-cream (RUB 850)
  • Dessert "Baltschug" – orange biscuit with marzipan (RUB 850)
