Thematic Menu 'Maya Plisetskaya 100 Years'

In cooperation with Bakhrushin State Central Theatre Museum, Hotel Baltschug Kempinski Moscow has created a thematic menu to mark the 100th anniversary of the birth of Maya Plisetskaya – the great ballerina who has changed the perception of theatre and dance across the world.

Chef Andrey Kagokin has crafted a gastronomic homage in 5 acts, revealing the multifaceted talent and tastes of the great artist:

  • A delicate macaroni with sheep's cheese, maple syrup, walnut, and peach, adorned with tuile and a rose, is a vibrant and inspiring start, symbolising the famous Carmen Suite.
  • A scallop salad with citrus dressing is a direct reference to Plisetskaya's poignant and weightless images.
  • A hot starter of foie gras with brioche, lingonberry jam, and a tartare of pineapple with chilli and lime reflects the legendary ballerina's love for France's cultural heritage.
  • The main course is the most tender halibut with ratatouille and a saffron beurre blanc sauce.
  • The culmination is the dessert ‘Maya’: a mini-bretzel cannoli with ‘bird's milk’ mousse, dark chocolate sponge, and a dark malt sauce with caramel and chilli.

This unexpected combination of flavours embodies the character of the legendary figure of world ballet – unique, bold, ahead of her time, with an unwavering love for life.

Dishes from the thematic menu can be ordered individually or as part of the ‘Plisetskaya’ gastronomic set with a glass of Bottega Prosecco Lady in Red Kempinski (8,500 roubles for the 5-course menu) at Café Kranzler and the Lobby Lounge from October 31 to December 26.
