Blue Fox The Bar Launches Gourmet Hand-sized Burger Menu
Blue Fox The Bar at Kempinski Hotel Corvinus Budapest has recently introduced a new hamburger menu. The selection features nine hand-sized burgers, each designed in-house to offer a wide combination of flavours.
Executive Chef Roland Holzer invented a bespoke house burger, Blue Fox Classic, with beef, lettuce, onion, mustard and tomato salsa and the locally inspired Budapest Burger with beef, goose liver and caramelised onion. The menu also features Surf & Turf with beef pate and crabmeat, lobster burger, chicken, feta, salmon, and cheese burgers. For vegetable lovers, the menu offers Vegan Burger with falafel, lettuce, tomato, red onion, cucumber and yoghurt mint sauce. All burgers can be ordered in no-carbohydrate version, too.
“This new gourmet burger menu explores the creative culinary potential of burgers,” said Holzer. “Hamburgers are easy to eat: whatever you put on your plate, you can also stick in your burger. With the current varieties on offer, everybody will find a favourite. Furthermore, burgers pair easily with both our wines and our cocktails. We collaborated closely with the bartenders so they can recommend ideal combinations.”
Lobster Burger harmonizes with the Passionita cocktail because lobster goes well with passion fruit. Classic Burger finds its match in Old Fashion as the ingredients in both are classic: beef in the burger and Maker’s Mark, brown sugar, Angostura and orange in the cocktail. Slow Fox’s local ingredients such as a plum-based herbal bitter, Unicum and soda water bring out the rich flavours of Budapest Burger.
“In future, we will introduce seasonal varieties,” said Holzer. ”In addition to the current hamburgers, I have about 35 others in my head. The possibilities are endless.”
The bakers tested the rolls for several weeks before they created the optimal consistency and sweetness that harmonize best with the various meats they use in the burger recipes, which are secret. The chefs regularly visit the meat supplier to check on the animals they feed for the hotel. Kempinski’s gastronomy concept is based on regional cooking, and requires that all the ingredients be sourced within 200 km. Kempinski Hotel Corvinus Budapest bakes its own hamburger rolls every day.

The bar is a hotspot for pre- and post-dinner drinks in Downtown Budapest. The dark walnut wood of the floor and tables, together with the rich upholstery and the seating, creates an intimate and clubby ambience while mirrored nooks and columns as well as glass play with reflections around the space. A cobalt blue acrylic material with inset mesh, suggestive of a soda siphon, surrounds the bar. It is homage to the Hungarian Ányos Jedlik, who in 1829 published his work regarding the production of soda water and the soda water bottle.
A street entrance with a heated patio is located on Erzsébet tér. The bar is open daily from 5 pm to 1 am. (On Friday and Saturday till 3 am.)
