Siam Kempinski Hotel Bangkok opens the 2026 culinary calendar with an exclusive guest chef pop-up by Alexis MOKO – a one-Michelin-starred chef whose career bridges classical French training and contemporary Japanese sensibility.
Born in Versailles, Chef Alexis began his journey in England before refining his craft in Paris at the legendary Taillevent, where he spent seven years under Alain Solivérès. His path continued in London at The Ledbury, followed by leading the opening of the fine-dining restaurant at The Lanesborough Hotel as head chef, which achieved a Michelin star in its first year. He later joined The Connaught Hotel as executive sous chef, contributing to landmark openings and overseeing multiple dining concepts.
In 2019, Chef Alexis relocated to Japan, immersing himself in local culture and forging close relationships with regional producers. In May 2023, he opened his own one-Michelin-starred restaurant in Kyoto, set within a 100-year-old Kyo-Machiya. His cuisine is defined by restraint, clarity and thoughtful composition, blending French foundations with Japanese seasonality, craftsmanship and terroir.
With international collaborations spanning Abu Dhabi, Bordeaux and New York, Chef Alexis brings a global perspective grounded in a clear philosophy: the best of now, beautifully crafted for both the eyes and the palate.
From 5–8 February 2026, guests are invited to experience his refined French–Japanese cuisine in Bangkok. The pop-up concludes on 9 February 2026 with a special four-hands collaboration dinner alongside Chef Berm Chayawee Sutcharitchanof Sra Bua by Kiin Kiin. The menu unites French cooking techniques with local Thai ingredients, expressed through Thai and Japanese flavours.
