The original menu has been specially developed by Executive Chef Svetlana Riskova, the founder and member of the board of the Latvian Chefs club and the winner of the “Baltic Culinary Heritage” award with many years of perfected experience in the industry.
She is also the creative mind behind the restaurant’s signature dish Latvian pike fillet cooked in a beeswax pike croquette, green peas, spring onions, thyme lemon sauce, nasturtium and nut pesto.
Apart from the exceptional blend of contemporary Nordic and Latvian cuisine, there is also a special list menu called “From the past to the present time” that honours and gives new flavour to the beloved Latvian dishes, such as grey peas with fried bacon or the traditional speciality “sklandrausis” pies with carrot and potato stuffing.
