A Reimagined Italian Experience

Dubai, 28 September 2021. The Palm Jumeirah’s original Italian concept, Brunello Restaurant, has been reimagined to offer a new menu and service experience at Kempinski Hotel & Residences Palm Jumeirah.

At the helm of the transformation is Chef Ivan, who has introduced a new menu that takes guests on a gastronomic journey from the north to the south of Italy.

Inspired by an idyllic Italian palazzo, Brunello’s interior decor features marble columns, rich fabrics and expansive windows, which fill the restaurant with natural light, while the spacious al fresco terrace offers exquisite views of the hotel’s lush mature gardens.

Playing tribute to Chef Ivan’s traditional Italian training, the menu presents classic dishes that nurture the gastronomic innovation that Dubai has become synonymous for. He experiments with classic flavours, unique approaches and new techniques to offer a fresh taste to the Palm Jumeirah’s dining experience. 

For starters, guests will find masterpieces including the Minestrone, Burrata Autumnale, Fritto Misto and a twist on the traditional antipasti. Scrolling further down the menu and Chef Ivan’s culinary innovation comes to life with his hand-picked and hand-crafted-to-perfection pasta collection.

A mouth-watering fusion of old and new includes the Risotto Alle Mazzancolle, a dish of carnaroli rice, tiger shrimp carpaccio and shellfish jus, and the Tagliolini Con L’Astice is indulgent with fresh Canadian lobster and homemade black tagliolini complemented by a cherry tomato sauce.

Further melt-in-the-mouth main selections include Filetto Di Manzo, a sous vide beef tenderloin with roasted vegetables and carrot and mustard cream. The Costolette D’Agnello Alla Milanese, a lamb chop cutlet, and the signature Branzino E Asparagi, a seared seabass fillet with roasted asparagus, are set to become any connoisseur’s front runners.

The dolci selection pays homage to Italian nostalgia with Panna Cotta, Tiramisu and Gelato, but Chef Ivan continues to charm with other highlights, including the Catalana Al Caffè – a warm crème brûlée and dark chocolate ganache.
