In this context, Kempinski Hotel Cancún is proud to announce the second edition of its culinary event "Aromas y Sabores".
Aromas y Sabores was created to honour the origins of the Kempinski brand and to enhance its gastronomic activities, harking back to the establishment of the first gourmet wine restaurant in early 1900s Berlin, Germany. This event celebrates Kempinski's rich culinary heritage, pioneering the rise of fine dining restaurants. In its first edition, Aromas y Sabores featured Mexican chef Benito Molina, marking a promising start for this culinary series.
In this second edition, Kempinski Hotel Cancún is pleased to welcome award-winning chef Aarón Ortiz, co-founder of the restaurant KABO. Located in Pamplona, Spain, and founded together with Jaione Aizpurua, KABO opened its doors just over a year ago and within seven months earned its first Michelin star. This young and ambitious project has become a reference in Navarrese gastronomy, standing out for its love of garden produce, seasonal products, and support for local small producers. In addition to the Michelin star, chef Aarón Ortiz has been recognized with the 2024 Sol Repsol award, the 2022 Young Talents award, and the 2022 Navarra Gastronomy award.
KABO means transformation in the Masai dialect, and the butterfly that symbolises this project represents the values and methodology of its gastronomic model. Like the butterfly, KABO's proposal develops in four stages: Origin, Creation, Exhibition, and Experience, taking diners on a unique culinary journey.
This time, Aromas y Sabores will consist of three exclusive dinners from July 18 to 20, 2024. The first will be directed to the Spanish Consulate and the Spanish Chamber of Commerce in Cancún, the second for the Chaine des Rotisseurs, and the third will be open to the public, including hotel guests and external visitors who wish to experience this incredible event. All dinners will be held at our exclusive AAA 5-Diamond awarded restaurant, The Club Grill, where the KABO team will travel from Spain to offer a fully immersive, exclusive, and special experience. Among the dishes that will be featured in the five-course menu are Tudela Lettuce Heart with roasted garlic, Stewed Onion on the flame, and Creamy Baigorri Honey Ice Cream. Sommelier and co-founder of KABO, Jaione Aizpurua, will enhance the culinary experience with a selection of wines carefully chosen to perfectly pair with each dish, enriching the sensory experience of the attendees.
