Interpreting the rich heritage of Turkish cuisine through contemporary touches, Borsa Restaurant once again welcomes guests this Ramadan with its traditional iftar tables, set against the timeless grandeur of Çırağan Palace Kempinski Istanbul. Overlooking the Bosphorus and rapidly becoming one of the city’s most cherished new destinations, Rüya Istanbul hosts Borsa’s signature iftar experience throughout the holy month.

Sharing the same culinary heritage and founding vision as Borsa Restaurant, Rüya Istanbul presents Anatolian cuisine to the world through a modern lens. Following its celebrated journeys in Cannes, Dubai and Riyadh, Rüya Istanbul’s chapter at Çırağan Palace Kempinski Istanbul continues as a refined reflection of a timeless flavour philosophy rooted in tradition. Alongside its Kandilli location, Borsa Restaurant presents its specially curated Ramadan menu at Rüya Istanbul, where seasonal selections meet Rüya’s contemporary Anatolian approach. First introduced at Çırağan Palace Kempinski Istanbul last year, this special Ramadan gathering returns for its second edition. It once again unites Borsa Restaurant’s culinary mastery with Rüya Istanbul’s modern Anatolian perspective at the same table. Framed by palace elegance, this experience celebrates the spirit of sharing that defines Ramadan, the refinement of traditional iftar tables and the rich flavours of Anatolia.

 The Ramadan menu begins with traditional iftar starters, including ‘Kayseri pastırma’ (air-dried cured beef), ‘Akçaabat butter’, ‘Vakfıkebir pide’ (traditional Turkish flatbread) and a selection of regional Anatolian cheeses. These are followed by olive oil dishes prepared with seasonal ingredients, refreshing salads and the soup of the day. Warm starters feature Borsa’s famous ‘su böreği’ (traditional layered pastry with cheese), ‘etli karalahana sarması’ (stuffed black cabbage leaves with minced meat) and traditional farm yoghurt.

For the main courses, guests may choose from three carefully prepared classics: thinly sliced döner, grilled Borsa-style meatballs and Konya-style stone-oven lamb served with ‘hünkar beğendi’ (smoked aubergine purée). Each dish is prepared with care, remaining faithful to authentic recipes.

 Rüya Istanbul’s much-loved signature flavours also enhance the Ramadan experience. Two-cheese stone-oven pide from the Black Sea, hummus enriched with bone marrow and Rüya’s signature chocolate dessert complement Borsa’s classics.

The menu concludes with an abundant selection of traditional desserts, including ‘güllaç’ (layered milk dessert with rosewater), ‘baklava’, ‘şekerpare’ (semolina syrup cakes), ‘kazandibi’ (caramelised milk pudding), baked rice pudding, sour cherry bread pudding, Borsa-style date and fig dessert, and profiteroles served on a tray.

Bringing together Borsa Restaurant’s culinary heritage and Rüya Istanbul’s contemporary atmosphere, this exclusive Ramadan menu invites guests to gather around tables centred on the culture of sharing, overlooking the Bosphorus.

The Ramadan iftar experience at Çırağan Palace Kempinski Istanbul is priced at TRY 6,200 per person, inclusive of VAT.
