At ALATi, fire is the starting point for stories told through flavour. Led by Executive Chef Phillip Taylor, an Australian talent with deep international roots, the kitchen brings together global grilling traditions in a way that is bold, balanced and grounded in honest cooking. Flame & Flavour captures this philosophy in a curated lunch menu designed for flexibility and discovery.

The set may be tailored individually, with selections made from a range of chef-curated dishes that span cultures and techniques. Each plate is a reflection of the fire, from the Japanese-inspired grilled black cod wrapped in nori and finished with miso-honey butter and Avruga caviar to the Thai-inspired spare ribs glazed in lemongrass and chilli, served with herbed potatoes and sour cream.

ALATi’s signature chicken kabsa offers a vibrant taste of the Middle East with spiced cardamom rice and harissa, while the lamb tandoori burger draws from Indian flavours for a heartier midday indulgence. Thoughtfully portioned and elegantly composed, each course brings texture, warmth and soul to the table.
