Butter Poached Lobster, S$42
This all-time classic way of butter-poached lobster is served with asparagus and enhanced with herbaceous hints from tarragon and green kale oil. The dish is also topped with bottarga roe for an extra umami flavour.

Lobster “Thermidor”, S$46
