Four-course CNY Set Lunch: S$78++ per person
The lunch menu features dishes such as the Haddock ”Yu Sheng” - a quintessential festive dish to signify abundance and prosperity for the new year. Chargrilled Abalone with spiced pineapple, Spanish ham, chilli petit pois and corn shoot features a modern twist on the mollusk is another highlight, as is a Kurobuta Pork Shoulder paired with romanesco, pork fat potato, lardo crisp and topped with a pineapple glaze. Bite into a delectable “Nian Gao” Mochi with desiccated coconut, palm sugar and Thai yam ice cream for a perfectly sweet finish.
Five-course CNY Set Dinner: S$168++ per person (Wine pairings are available at an additional S$88++ per person)
Dinner begins with an immaculate Razor Clam & Abalone presented with a tamarind gel, shallot, olive caviar, black fungus and a chilli-lime emulsion. As the night continues, the table will be treated to some of the best produce available, including their Canadian Lobster and Quail, offering a flavourful bite and the Flounder served with fried baby leek, lemongrass and coconut foie gras. Finish the night with a traditional and refreshing Osmanthus Soup packed with the goodness of water chestnut, peach gum and white fungus.

Six-course CNY Set Lunch: S$138++ per person
Start the reunion with a hearty Drunken Chicken with Sea Jelly and Smoked Duck Breast. Continue with a sea of classics such as the Braised Sea Treasure and Shredded Abalone in Essence Broth. There is also Braised Sea Cucumber with Black Moss and Chinese Mushroom to symbolise the new year and that everything will continue to move upwards in life. Sample some of the best seafood available with the Steamed Red Garoupa with Garlic Sauce and Braised Ee Fu Noodles with Crab Meat. End the festivities on a sweet note with a warm bowl of Orh Nee (Teochew Sweet Yam Paste).
Six-course CNY Set Dinner: S$168++ per person
Begin the evening with a Crispy Soft-Shell Crab with Green Wasabi & Mango followed by a Double Boiled Chicken Soup, Matsutake Mushroom, Dried Scallop and Sea Cucumber. Guests will be treated to contemporary Asian creations like the tender, savoury and succulent 10-head Abalone & Dried Oysters with Stir-fried Vegetables and a whole Steamed Chilean Sea Bass with Crispy Fermented Bean & Conpoy Crumbs for added abundance. Finally, end the meal with the fragrant Glutinous Rice with Japanese Dried scallops & Chinese Preserved Meat and a delightful Hot Walnut Dew Soup with Rice Dumplings to savour with loved ones for a blessed new year ahead.
Eight-course CNY Set Dinner: S$238++ per person
Toss to the new year with The Capitol Kempinski Abalone Yu Sheng Platter, offering an auspicious selection of ingredients for the classic lo hei. The feast continues with an indulgent Pan-fried Foie Gras and Chilean Sea Bass with Orange and Mango. Guests will be treated like royalty with the Bird's Nest and Dried Scallop Soup; and Steamed Red Garoupa Fillet with Black Garlic Sauce. Herald in good luck with the Braised Sea Cucumber with Black Moss and Chinese Mushroom; and Fried Zhenjiang Pork Prime Rib. Wrap up the new year celebrations with Baked Rice with Chinese Preserved Meat and Mud Crab Meat, followed by the crowd favourite Mango Pomelo with Vanilla Gelato.
