Celebrate Burns Night with exceptional Highland whiskies and traditional fare at the Ardnamurchan Whisky Pairing Dinner at 15 Stamford Restaurant. In collaboration with Ardnamurchan Distillery, this experience showcases an evening of poetic tribute, culinary finesse and exceptional whiskies in this six-course menu.

Your evening begins with a refreshing Maclean’s Nose Highball, perfectly accompanied by a savoury Welsh rarebit to awaken the palate.

The Maguro Tartare, a refreshing starter with black bean dressing, daikon and smoked cauliflower cream is paired with the Ardnamurchan Highland Single Malt Scotch Whisky, craftily blending umami flavours with a briny finish.

The second course features a lavish Rougie Foie Gras served with whiskey-spiced raisins and banana textures, perfectly complemented by the Ardnamurchan AD/10 Years Old, with notes of baked bananas, brown sugar, figs and wine gums on the nose, followed by warm, spiced waxiness on the palate.

The Lobster Bisque, a luxurious blend of caviar, brioche, and crème fraiche served alongside the Ardnamurchan Cask Strength Release, to highlight its subtle seaweed salinity.

Main comes with a choice of Grilled Lumina Lamb Loin with smoked coriander pesto and parsnip puree; Pan Seared Barramundi with tomato harissa and squid ink dressing or Nasu Eggplant with eggplant puree, dukkah, and ras el hanout. Each option is paired with the Ardnamurchan AD/Sherry Cask Release 2024, with deep flavours on both the nose and the palate.

On to the Burns Night tradition, no tribute to the Bard is complete without Scottish Haggis, elevated here with a foie gras sauce, fig and raisin chutney, and roast artichokes. This signature is paired with the Singapore Exclusive Single Cask, making it the highlight of the night.

Conclude the night with a Ginger Flower Valrhona Chocolate Tart served with raspberry and vanilla crumble. This final course is paired with the AD/ Sauternes Cask Release. Sweet on the nose and savoury on the palate, this whisky is wonderfully balanced with a dry finish, providing a delicious end to this exclusive pairing.
