The Apurva Kempinski Bali's Powerful Indonesia programme brings a series of Peranakan cuisine to Bai Yun. This February and March, we are introducing the Malaysian Peranakan cuisine through a special soup base: Kuah Ikan Lada Hitam. Exploring the flavours of Peranakan cuisine, which blends Chinese ingredients with distinct spices and techniques, this soup base is aromatic and filled with the traditional herbs that are beloved in the South East Asia region.
