Drawing inspiration from Thailand’s most famous tropical fruits, the 13 new cocktails, zero-proofs and crafted lemonades are inspired by the ‘Garden of Siam’. The new creations are designed to impress cocktail enthusiasts through refined bartending techniques, premium spirits and ingredients that celebrate Thailand’s rich natural bounty.


The new menu features local Thai fruits from four regions of Thailand, showcasing the country as a true fruit paradise and highlighting authentic Thai flavours in every cocktail. Each drink reflects innovative bar techniques, including the use of ‘sous vide’ to create high-quality infusions that enhance the taste and aroma of each fruit, while the ‘clarifying’ technique ensures a smoother, more refined mouthfeel.


‘Our new cocktail menu not only celebrates the diversity of Thailand’s produce but also showcases the rich traditions of local Thai culture through food and drink and is enhanced by modern cooking and bartending techniques,’ said Executive Assistant Manager Patra Patrayuwat.


Guests can explore a selection of cocktails by taste and complexity, starting with River Kwai, infused with local gin and mango from Ratchaburi; Pandan Garden, featuring aromatic pandan from Samut Songkhram; Tropic Thunder, made with passion fruit from Chanthaburi and cacao from Chumphon; Autumn Dream, a pear-infused cocktail from Nakhon Sawan; Blind Bird, a pisco-based drink infused with lemongrass from Nakhon Pathom; and Tiki Taka Sidecar, showcasing jackfruit from Nonthaburi. Each cocktail is crafted with a distinctive character, creating a unique journey through the Garden of Siam and celebrating Thailand’s abundance with the world.


Guests preferring non-alcoholic options can enjoy four zero-proof creations inspired by the Garden of Siam: Waii, featuring lemongrass from Nakhon Pathom; Nawa, with jasmine green tea from Chiang Rai; Coldbrew Fizz, combining cold brew with lemon and orange; and Berry Breeze, blending cold-brew coffee with raspberry purée and pomegranate syrup. All are prepared using a cold-press technique to preserve natural nutrients and flavours.


1897 Lounge’s new beverage menu is available alongside a curated collection of vintage spirits, reflecting a passion for crafting local experiences presented with global sophistication. Prices start from THB 290++ per glass for zero-proof drinks and crafted lemonades, while cocktails start from THB 490++ per glass. Guests can enjoy live performances by the resident pianist and singer every Friday and Saturday from 18:00 to 23:00, which help set the tone for an elegant weekend celebration.
