Embark on a new gastronomic journey ‘La Dolce Vita’ through Italy’s diverse regions, savouring authentic and delectable dishes until 31 August 2023

Bangkok, 3 May 2023 – Executive Chef Carlo Valenziano takes you on a delectable sensation journey of ‘La Dolce Vita’, the latest culinary craftsmanship at ALATi, the Mediterranean restaurant at Siam Kempinski Hotel Bangkok. Embark on a voyage through Italy, journeying across the different regions, savouring the authentic appetisers, pastas, mains and desserts that embody the essence of the ‘Sweet Life’.

Explore ‘La Dolce Vita’, a flavourful culinary journey of authentic and delectable dishes through Italy’s diverse regions. Chef Carlo has designed classic and contemporary dishes to evoke gastronomic memories, with bracing flavours of coastal Italy. Chef Carlo’s inspiration comes from the rich heritage of Italian cuisine combined with his experiences from and exciting trips along the Italian Peninsula – from Sicily, Venice, Piedmont, Parma, Capri, Rome, Verona, Milan, Portofino and Veneto to Central and Southern Italy. The stories hidden behind them reflect his belief that ‘food is life’ and that ‘treating ourselves to the best food allows us to discover what it truly means to live a sweet life’.

Begin your odyssey by stimulating your palate with a burst of flavours from the sun-kissed Sicily, with ‘Carpaccio di gamberi rossi’ (Sicilian red prawn carpaccio, shaved fennel, orange segments, Avola almond and lemon cream) or ‘Polpo e patate’ (poached Mediterranean octopus, potatoes, celery, taggiasca olives, lemon and parsley, tossed with an excellent Sicilian extra virgin olive oil). Cold-cut lovers will also appreciate ‘Affettati DOP’ (a selection of extraordinary cold cuts composed of 20-month Galloni Parma ham, capocollo from Martina Franca, salami from Felino and ’nduja from Spilinga), served with Bella di Cerignola olives and bread sticks. The ‘Parmigiano-Reggiano’ from Parma has been shaped into mouth-watering cheese fritters made with a 24-month Vacche Brune Parmesan, served with black truffle, honey and grapes, and it is also another dish which cannot be missed.

The pasta section embraces everyone’s favourite homemade fresh pasta dishes, from ‘Carbonara’ (a Roman classic consisting of spaghetti from Gragnano, organic egg yolk, cured pork cheek, pecorino and black pepper) to the ‘Risotto all’Amarone’ from Verona, with premium carnaroli rice, Amarone wine and 30-month Parmesan cheese cream, which are all sure to leave a lasting impression.

Chef Carlo’s main-course selection of tempting delicacies includes ‘Costoletta alla Milanese’ from Milan (breaded veal cutlet cooked in clarified butter, lemon, salt flakes and rocket leaves) and ‘Rombo alla ligure’ from Portofino (oven-baked turbot roasted with white wine, cherry tomatoes, taggiasca olives, fresh thyme, pine nuts and potatoes).

This unforgettable gastronomic voyage through Italy ends with a sweet finale of delicious desserts, featuring ‘Crema Fritta’ from Venice (fried lemon and vanilla custard), served with raspberry and icing sugar; ‘Sicilian cannoli’ from Sicily (crispy pastry shells, sheep ricotta, chocolate, pistachio and orange confit); and the highly celebrated ‘Tiramisu’ from Veneto (mascarpone cream, coffee ladyfingers, dark chocolate and cocoa powder). Each carefully crafted dish conveys its own story and is waiting for fellow gourmands to experience it.
