Grand Kempinski Hotel Shanghai’s new signature dish for 2019 is an expert study in flavor and subtlety. Delicate barely-cooked Boston lobster paired with scrambled egg white and oven-dried crab roe. The intoxicating seafood aroma invites you to taste a wonderfully fresh dish which is prepared in such a way as to elevate all its individual components.
A labor-intensive preparation, the head and shell of the lobster must first be removed and the claw meat extracted. The key in cooking the lobster is in getting as much flavor out without compromising on freshness. The seemingly simple scrambled egg white is cooked with precision to ensure its moist texture. Once the dish is plated, we add a sprinkle of oven-dried crab roe to enrich the taste and aroma, as well as accent the dish with a vivid highlight of orange color.
