The allure of the rich earthy aroma of truffles is irresistible in our new signature dish for 2018 - the Truffle Tortelloni. Tortellini is a similar dish as Chinese dumpling and it is the preferred choice for Chinese customer.
An Italian classic, the humble tortelloni finds itself elevated to new culinary heights at Acqua restaurant at the Grand Kempinski Hotel Shanghai. Aromatic truffle paste is kneaded into the very dough of the pasta, while a mouth-watering stuffing made of ricotta, porcini mushrooms, parmesan cheese, and parsley can be found at the centre of every bite.
The dish is plated on a bed of sautéed Parma ham and leeks and topped with shaved truffle and parmesan. To complete the deluxe experience, the Truffle Tortelloni is served table-side with the finishing touch - a pouring of ham stock that is simply bursting with flavour.
