The alpine salmon is an arctic char from sustainable breeding where every step, from the origin of the egg up to the final product, has been meticulously monitored. At the Schwarzreiter Tagesbar, the alpine salmon, which is known for its firm yet tender meat, is served pickled.
Executive Chef Anton Pozeg has created a pickling mixture, purely for this arctic char, which gives it a unique flavour. Orange, lemon, coriander, parsley, anise, and allspice are mixed together to create a wonderfully fruity and equally spicy touch.
To round off the taste sensation, the salmon is served with red beets, radishes and lemon. This delicacy can also be found on the Schwarzreiter Restaurant’s menu.
