Try three kinds of marinated salmon in dill, vodka and beetroot; pearl barley beet risotto with local goat’s cheese, green beans and beet chips; Baltschug-style Koulebyaka with prime beef, buttered vegetables and red wine sauce with thyme; Russian dessert “Bird’s milk” with cranberry mousse and buckthorn marmalade. Each dish is accompanied by a special wine recommendation upon sommelier’s choice.
