Creating a special set menu for the Moscow gastronomic festival, Executive Chef Maxim Maksakov based his concept on seasonal ingredients and combinations, returning the degustator to earth-minded materials and awakening feelings through sublime aftertaste at the same time. The set visualization reminds guests of autumn landscapes, and the union of tastes created by the generous gifts of nature.

Gastronomic set menu will be available thorough all October:

  1. Starter: 32-carat-gold sturgeon / own caviar / pickled sweet apple carpaccio / violet potato / honey saffron lime jelly
  2. Main course: Slow-cooked lamb / baked parsnip / pomegranate cloud / pistachio mousse
  3. Dessert: Chocolate persimmon confit / autumn sorbet / lavender marmalade
