Fuzhou, 17 March 2025 – Yunge Grill at Kempinski Hotel Fuzhou will welcome Thomas Tang, Technical Consultant of Guangzhou Angliss, who will collaborate with the hotel's culinary team from 22 March to 27 March 2025. From the delicate freshness of Ningde yellow croaker rolls to the rich flavour of M8-9 Wagyu beef tenderloin, and even the inventive touch of porcini mushroom ice cream, local craftsmanship will be reimagined with an international perspective.
Having spent over a decade in Michelin-recommended restaurants and international five-star hotels, Chef Thomas Tang has mastered the art of blending Western culinary techniques with local ingredients to create refined, harmonious flavours.
Truffles, one of the world's top three delicacies, take centre stage in the exclusive joint menu by Angliss and Kempinski Fuzhou. Guests will also savour the unique flavour of Fujian yellow croaker rolls, paired with French king scallops and Fuzhou's unique Pangqi sauce. Another highlight is Australian Wagyu beef, which will be used to create Wagyu Tartare and Beef Consommé, showcasing its fillet, tongue and tendon.
During the wine dinner from 27 to 29 March, diners will experience the sommelier service at Yunge Grill. The evening will begin with Torresella Prosecco paired with signature bread, followed by wines from Tyrrell’s, sourced from the Hunter Valley, Australia's oldest wine region. Guests will savour Old Winery Chardonnay, HVD Single Vineyard Hunter Valley Semillon and Tyrrell’s Estate-Grown Shiraz, each expertly paired with appetisers, seafood and the main course respectively. To finish, Vasse Felix Cane Cut Semillon from Western Australia’s Margaret River region will complement the Chocolate Truffle Dessert.
