The Danish chef experienced a gastronomical epiphany during his first holiday in Thailand. This led him to spend five years mastering the Thai cuisine, before returning to Denmark.
After returning to Copenhagen, he opened the first contemporary Thai restaurant, Kiin Kiin (Thai for “let’s eat”), one of two international Thai restaurants, to earn a Michelin star. His trademark touch can also be seen in the Bangkok restaurant Sra Bua by Kiin Kiin, at our sister property, Siam Kempinski Bangkok.
Known as the culinary wizard, he employs cooking techniques that reflect the “Kiin Kiin” ethos: beautifully presented dishes that express authentic Thai flavours, which are enhanced by a modern twist and are accompanied by a magical performance and showmanship.
When asked what brought him behind the kitchen counter, he answers:
»At 14 I was a very fashion-conscious teenager, but my mother didn’t want to buy me the jeans I wanted, so I went to a local restaurant and asked for a job. I had no interest in cooking but I liked the atmosphere and decided to take an apprenticeship at a famous hotel. After two weeks I was fired and the head chef told me I would never make it in the restaurant business, so the moral of the story is to never give up!«
