Restaurant Kanova Presents New Menu
Chefs of the prestigious Kempinski Hotel Adriatic near Umag successfully opened a new season of culinary surprises with attractive menus, representing the pinnacle of Istrian cuisine and announcing the opening of the restaurant Kanova.
Tastes and scents of blue and green Istria traditionally dominate the menus of the restaurants Kanova and Dijana, which illustrate Executive Chef Daniel Pause and Head Chef Zoran Čobanov’s passion for gastronomic hedonism, accentuated through creative aesthetic presentation of their dishes. Whereas Daniel Pause grew as a chef in famous European hotels of the Kempinski collection of individuals, Zoran Čobanov’s CV records a career of more than twenty years, as well as work in several Michelin-starred Italian restaurants. Since joining the Kempinski family, Zoran has been visiting selected restaurants within the group every year, thus sharing valuable experience with colleagues and introducing the latest culinary trends on his menu. This year Zoran visited the famous restaurant Edvard in Vienna at Palais Hansen Kempinski, which recently renewed its status of one-star Michelin restaurant in the guide “MICHELIN Guide Main Cities of Europe 2016” under the leadership of Executive Chef Anton Pozeg.
“What a great experience! Kanova’s menu relies on the seasonal character of ingredients used in traditional local cuisine. With a creative approach to form, colour and texture of food and by using innovative cooking techniques, we create our own contemporary interpretation of Istrian-Mediterranean fusion. Ultimately, the idea is to visually surprise the guest and delight his refined palate with complex, layered flavours and aromas. Anton and his team also rely on creativity and innovation, so we have a lot of common topics. We are both curious and always in search of culinary innovations, and we shared many ideas about balancing flavours, as well as about the Mediterranean aspect of our menus. This was also an opportunity for me to introduce some of Kanova’s dishes to the Viennese audience, including signature dish Istrian New Fritaja,” said Zoran.
The concept of restaurant Kanova was built on the interpretation of local Istrian cuisine within a Mediterranean context, which uses Adriatic fish and seafood, Istrian boškarin-ox meat, home-made pasta and locally produced vegetables. Favourite ingredients of Zoran’s kitchen are Istrian olive oil, fior di sale and spices from the hotel’s own herb garden. Zoran’s signature dish Istrian New Fritaja and his tasting menus, known as “Chef’s Menus”, are amongst the most popular menu items. The restaurant’s offerings are complemented by the collection of renowned Croatian and international wines, presented by restaurant manager and sommelier Moreno Rudan.
The restaurant is located on the top floor of the conference centre at the hotel’s private beach. The contemporary interior design of the Istrian tavern is emphasised by wooden materials and an open fireplace, while the terrace offers spectacular panoramic views of the Adriatic Sea and the neighbouring countries. The restaurant is open for dinner from Tuesday to Sunday throughout the summer since June until mid-September.
