A Summer Feast Full of History at Tuğra Restaurant

Istanbul, 27 July 2016 - Step into the world of Ottoman cuisine at Tugra Restaurant, a gateway into the authentic flavors and textures of traditional Turkish fare, with a new summer menu for guests to taste the intrigue and grandeur of an entire empire.

Lauded as one of the most beautiful venues in the modern world, Tuğra is equally renowned for its inherent fusion of the past with the present. Here, high ceilings are accompanied by full-length windows overlooking the Bosporus; marble columns adorn either side of the moon-lit terrace; and classical Turkish music fills the dining area. The finest linens sheathe the tables; exquisite modern artwork decorates the walls and the menu itself is based primarily on authentic Ottoman recipes.

Sezai Erdoğan, the first Turkish Executive Chef of Çırağan Palace Kempinski Istanbul, commented: "Tuğra, largely because of its relationship with Çırağan Palace Kempinski, the Ottoman palace turned hotel, is devoted to ensuring that our guests can experience these Ottoman flavors. To prepare our summer menu, we spent more than a year not only selecting ingredients, but studying them closely to retain its history and original flavors. Lamb shank, for example, served with oven baked cherries and “Amasya” apples was said to be good for the brave men and good humored people of the period and it was thought to add beauty in the Eastern Anatolian Region. Akıtma Mastic Börek was inspired by the Turkmen women and the very thin doughs they rolled. And we included Bread ‘Kadayıf’ with Coconut in our menu due to its past popularity at feasts. The sultans would use it to welcome their foreign guests. Each dish is steeped in history and we’re thrilled to be able to provide them for our guests.”

At Tuğra Restaurant, history lies not only within the walls, but within the food itself. It is a stunning representation of the glamor and grandeur that came to define the Ottoman culture, especially that of the sultans and societal elite.
