The Summer Terrace at Hotel Baltschug Kempinski Moscow: A New Look and Culinary Discoveries

The newly redesigned Café Kranzler terrace welcomes the summer season with a fresh look, panoramic views of the Moskva River and the Kremlin and an innovative menu curated by Chef Andrey Kagokin.

This summer, the terrace has been completely transformed to offer an even more inviting and elegant atmosphere. On clear days, guests can indulge in a new seasonal menu while enjoying breathtaking views of the Moskva River, the Kremlin and St. Basil’s Cathedral.

The Kranzler Terrace is the perfect destination at any time of day: enjoy a morning coffee with a croissant, a productive business lunch or a romantic dinner as the embankment lights shimmer at dusk. ‘Summer is a time for vibrant flavours and fresh impressions,’ says Chef Andrey Kagokin. ‘With this menu, we sought to create a harmonious balance between light seasonal dishes and bold, rich flavours. We focused on the finest seasonal ingredients and unique combinations that perfectly complement the warm season.

The new menu delights with refreshing gazpacho served with crayfish tails, alongside the bright Eastern notes of Lebanese fattoush. Asian-inspired flavours include buckwheat noodles with prawns and teriyaki sauce, as well as three variations of Thai curry – with chicken, seafood or vegetables. Honouring Russian culinary tradition, a light okroshka prepared with kvass or kefir adds a refreshing touch. Other highlights include prawns in wasabi sauce, Parma ham with melon, a selection of meze appetisers, beef carpaccio and duck leg confit with spiced pear.

Signature favourites from previous specials return with new finesse: scallop salad with citrus dressing, steamed halibut wrapped in zucchini with creamy sauce and red caviar and pomegranate sorbet with a hint of cinnamon. The beloved warm, crispy eggplant salad makes a comeback in an elegant new style. The dessert menu promises indulgence for every taste. Classic sorbets, signature cheesecake and honey cake are joined by enticing newcomers such as Dubai cheesecake on a kataif pastry base, lemon dessert with Italian meringue, ‘Milk Girl’ cake with cherry and the delicate strawberry creation, ‘Pink Dream’. To complete the experience, guests can enjoy refreshing homemade lemonades and signature cocktails, while breakfast offerings feature an extensive selection of coffee, premium teas and freshly squeezed juices.

The new summer menu is available at Café Kranzler, on the summer terrace, in the Lobby Lounge Bar and through in-room dining.
