Hotel Baltschug Kempinski Moscow opens the summer gastronomic season

Moscow, April 2023 – The new summer menu by Andrey Kagokin, Chef de Cuisine at Hotel Baltschug Kempinski, will bring together people of the widest gastronomic views at a friendly table.

The menu opens with cold and hot appetisers – octopus carpaccio with citrus jelly, beef carpaccio with parmesan foam, tuna tataki with yuzu sauce, shrimp tempura and spring rolls with vegetables and wood mushrooms. The traditionally popular tartares – from the freshest premium beef and salmon – were joined by crab tartare and prawns with avocado sorbet. Last summer's bestseller – summer tartare with goat cheese, roasted beetroot, broccoli, rucola and pomegranate grains – is back on the menu. New in "Salads" – farmer burrata with Uzbek tomatoes, "Summer Freshness" salad made of the finest cuts of cucumber, celery, fennel and kohlrabi with light yoghurt dressing and red currant gel.

One of the most popular dishes of this year's Lenten menu – warm salad of crispy aubergines with tomatoes, chard leaves and coriander – has now taken its place on the main menu. In the Soups section, the all-season borscht with beef and sour cream has been joined by classic gazpacho and gazpacho made of roasted ramiro peppers with bryndza, as well as okroshka with chicken on kvass or kefir and sorrel soup with a poached egg and tom yam.

There are many new items in the "Hot dishes" section – beef sous vide with red wine sauce, Murmansk cod with citrus white wine sauce, duck breast glazed in honey and orange sauce with asparagus, octopus tentacles with baby potatoes and sun-dried tomatoes and grilled langoustines with aioli sauce. Among several new types of pasta we recommend to try, first of all, pasta "Kalamarata" with octopus tentacles and orecchiette with pesto, mozzarella and cherry tomatoes.

The chef didn't forget dessert lovers, among the novelties are blueberry cheesecake in original serving, truffle sweets and truffle cake, and also the hit of Maslenitsa menu – apple strudel in pancake batter with vanilla cream. The classic dessert Pavlova is back on the menu.

Refreshing homemade lemonades and speciality summer cocktails will perfectly complement any lunch or dinner, and for breakfast, we will be happy to offer more than a dozen types of coffee and freshly squeezed juices. The new menu can be tasted in Café Kranzler, on the summer terrace, in the Lobby Lounge bar and by ordering it for your room.
