Signature Dish - Mansaf
Mansaf is a traditional Jordanian dish dating back to the Mamluk period of around 1200 AD. This local speciality is prepared with lamb, sometimes replaced by chicken, cooked in a sauce of fermented dried yogurt, accompanied by steamed rice and served on a large platter with a layer of flatbread.
Mansaf is often referred to as being the national dish of Jordan, but is also popular in other regions of the Middle East. It is served on special occasions such as weddings, births and graduations, or to honour a guest. Therefore, Mansaf reflects very much the true hospitality of Jordan.
