Istanbul, 15 June 2026 – Following its success in Cannes, Dubai and Riyadh, Rüya Istanbul, located at Çırağan Palace Kempinski Istanbul, presents a sophisticated dining experience on the shores of the Bosphorus, where Anatolia’s rich culinary heritage is reimagined through a contemporary lens. Drawing on the culinary traditions of the region stretching from the Mediterranean to the Black Sea, Rüya combines traditional flavours with contemporary techniques to transform the culture of sharing into a refined gastronomic ritual.

From elegant lunches to lively evening gatherings, the restaurant offers a seamless experience that evolves throughout the day. With its enchanting Bosphorus views and distinguished beverage selections, Rüya Istanbul delivers a unique dining experience in one of the city’s most remarkable settings.

This season, the restaurant welcomes guests to its spacious terrace nestled within the gardens of Çırağan Palace and introduces a refreshed summer menu inspired by the finest seasonal ingredients.


Starters Inspired by Seasonal Produce

Among the standout starters on the summer menu, Muhammara showcases the harmonious balance of roasted red peppers, tomatoes and walnuts and is served with handmade sourdough bread. Village Tomato Salad, a staple of summer dining, offers a refreshing combination of seasonal tomatoes, Ezine cheese and olives. Artichoke Salad, prepared with fresh artichokes from Urla, highlights the flavours of the season with a special spice sauce and Obruk cheese. Roasted Beetroot balances the natural sweetness of young beetroot with creamy goat cheese, while Artichoke Soup, complemented by eggplant purée and crispy artichoke, completes the selection.


Signature Summer Flavours from the Grill and Sea

Seafood and expertly grilled dishes take centre stage in Rüya Istanbul’s summer selection.

Harissa Prawn, sautéed with harissa pepper and lemon, stands out with its vibrant aroma.

Celebrating the culture of sharing, Whole Grilled Lobster and Erişte is one of the highlights of the season, pairing grilled lobster with erişte pasta and tomato sauce in a distinctive presentation. Grilled Dover Sole, served with mussel jus, samphire, fresh zahter and capers, offers a light Mediterranean-inspired experience. Tomahawk, prepared with dry-aged bone-in ribeye, delivers a bold and savoury flavour journey, accompanied by aromatic herb sauce and potatoes infused with zahter.

Signature dishes including Truffle Börek, Crispy Calamari, Manti, Beef Rib Pide, Pistachio-crusted Sea Bass and 24-Hour Slow-Cooked Beef Rib complete the selection, showcasing Rüya’s interpretation of traditional flavours.


A Sweet Finale to Summer Evenings

Rüya Istanbul’s dessert menu provides an unforgettable conclusion to summer evenings by reinterpreting Anatolia’s beloved classics with contemporary touches.

One of the menu’s signature creations, Chocolate and Turkish Coffee, combines a salted caramel dark chocolate sphere with cardamom and Turkish coffee ice cream for a rich, refined balance of flavours. Bringing a modern interpretation to traditional desserts, Oven-baked Rice Pudding is served with raspberry and clotted cream ice cream, while Baklava with Antep pistachio takes centre stage alongside Orange Revani, where almond and orange shine through. Eggy Bread, one of Rüya’s classic desserts, transforms a nostalgic favourite into a sophisticated dessert experience, balancing honey and cinnamon for an elegant, sweet finish to summer tables.

Handmade ice cream and sorbet options are among the menu’s most striking complements, offering a refreshing and creative finale to the season. Unusual flavours such as thyme and olive oil, and dark chocolate and bergamot, sit alongside sorbet alternatives like strawberry and basil, apricot and lime, and mango and passion fruit.
