Chairman Mao's Braised Pork Belly
Hunan Province is the birthplace of Chairman Mao who was one of the greatest politician, militarist, litterateur and poet in the world and the founder of People's Republic of China.
It is one of the most famous Hunan dishes which also was Chairman Mao's favourite. Sweet, aromatic chunks of pork belly are cooked with fresh ginger, chilli, star anise, cinnamon and Shaoxing white spirit. It is said that the dish is widely regarded as the brain food which provided Chairman Mao with the wits to defeat his enemies.
