  • Tartlet of pigeon and quail with absinth mousse
  • Baked turbot and salmon coated in puff pastry with mustard dill
  • Mini essence of venison with brown bread dumplings with lardo and cooked sausage
  • Apple sorbet
  • Medallion of deer with potato mushroom risolee and pickled nutmeg pumpkin
  • Pear parfait with home-made rum pot
