Recently, well-known baklava Chef Duran Güneş, the latest transfer of the culinary team who hails from the holy land of baklava in Anatolia, Gaziantep, created Çırağan Palace Kempinski İstanbul’s very own baklava room.
A finely layered pastry filled with nuts and steeped in syrup, baklava is a traditional sweet for celebrations or gift-giving. Making baklava requires skill and a chef needs to be trained in baklava-making in particular. In addition, a baklava room must meet special requirements. For example, the room must be at a temperature of 10°C and protected against wind to keep the dough at the desired consistency, otherwise it will become dry and affect the taste.
The only Ottoman Imperial Palace & Hotel on the Bosphorus, Çırağan Palace Kempinski, did not hesitate to transform a corner of its historical palace into a baklava room, proving once again why it deserved to win the award for Kempinski Best Food and Beverage Hotel 2013. Many hotels and restaurants outsource this hard-to-make traditional sweet due to the special requirements needed.
