Celebrate the cool season with a modern afternoon tea featuring berry-led creations inspired by the vivid hues and vibrant character of Royal Project strawberries. Rouge Berry Afternoon Tea unites refined technique, playful creativity and the irresistible freshness of Thailand’s northern highlands – a contemporary expression of the fruit’s natural allure.
The experience unfolds with artful savouries that balance richness and brightness, including a silky Burrata Savarin paired with semi-sundried tomatoes and strawberry jam, and a striking poached lobster cocktail layered with sweet-and-sour strawberries. Each bite is crafted to surprise with colour, texture and contrast, bringing a lively edge to the classic afternoon ritual.
The sweet selection continues the theme with sculptural craftsmanship – from a delicate White Chocolate and Strawberry Mousse ‘Rocher’ to a nuanced Strawberry Pistachio Entremet and a charming chocolate madeleine filled with strawberry compote and sakura jelly. Freshly baked scones, presented with homemade strawberry jam, lemon curd and Devonshire clotted cream, complete the experience.

Introducing Chef Franck Istel
Executive Pastry Chef, Siam Kempinski Hotel Bangkok

Born in the patisserie-rich city of Strasbourg, France, Chef Franck Istel discovered his culinary path early, beginning his apprenticeship at the age of 15 in a traditional Alsatian brasserie. Fascinated by the precision and poetry of pastry-making, he pursued formal training and earned diplomas in both pastry and baking – disciplines that continue to shape his craft today.
By the age of 21, Chef Franck had opened his own pastry boutique, refining his technical artistry and leadership. His journey soon expanded across the globe, taking him from the remote charm of St-Pierre et Miquelon to dynamic culinary capitals across Asia. Over the years, he has led pastry operations at numerous five-star hotels and luxury resorts, training teams, developing signature menus and elevating pastry experiences with creativity and finesse.
Chef Franck’s style is a thoughtful blend of classical European technique and playful innovation, often inspired by the richness of Asian ingredients and traditions. His creations are celebrated for their balance, beauty and a touch of joy.

Rouge Berry Afternoon Tea is priced at THB 1,450++ per set for one person, inclusive of a serving of tea or coffee.
