Tea Meets Mixology: Gagan Gurung from Hong Kong’s first tea-inspired cocktail spot, Tell Camellia takes over The Bar at 15 Stamford

The Bar at 15 Stamford, nestled within the prestigious Capitol Kempinski Hotel Singapore, proudly presents an exclusive one-night-only guest shift on Thursday, 16th January 2025, at 8 PM, featuring industry legend Gagan Gurung of the acclaimed tea-inspired cocktail bar Tell Camellia, ranked among Asia’s 50 Best Bars and 100 Best Bars since 2021. This marks the first guest shift of the year since the launch of 15 Stamford's The Lost Highway menu, curated by Bar Manager Kavish Hurrydoss and Head Bartender Máté Csizmadia.

Hailing from Nepal, Gagan Gurung’s journey into the world of mixology began with an early fascination with flavours. Initially trained as a chef, Gagan quickly realised that his true calling lay in bartending. He honed his craft at Zuma Hong Kong, where he focused on pairing food and drink flavour profiles to create innovative cocktails that push the boundaries of traditional mixology. As the co-founder of Tell Camellia Hong Kong, Gagan has carved a niche for himself in the Asian bar scene with Hong Kong's first ever tea-inspired cocktail bar. His other ventures include the speakeasy-style Barcode Hong Kong, known for its coffee program and desserts, as well as his role as Beverage Manager and Co-Founder of Singular Concept Hospitality Group. Gagan’s work has been recognised across the region, earning him accolades such as Asia’s 50 Best Bars (2021 and 2022), Top 25 Bartenders in Hong Kong, Top 4 in Bacardi Hong Kong final & winner of Gin Mare Regional finals, Top 3 Gin Mare Global Final, Chivas blending champion Hong Kong and Time Out Bartender Of The Year 2022.

In this bar takeover, Gagan will showcase four signature creations from his celebrated cocktail programme, Teatails, a masterful collection of tea-based cocktails designed to elevate the humble tea leaf. Drawing inspiration from teas around the world, Teatails features refreshing tea-infused spirits and gins redistilled with a variety of unique tea blends. Each cocktail transforms the art of tea into an immersive sensory experience, reimagined to express the unique qualities of each tea variety.

Mango Sticky Rice  – A delicate fusion of fragrant Puer tea, refreshing mango sake, coconut, and pandan, rounded off with Ford Gin, offers a tropical twist on a classic combination, encapsulating the essence of Southeast Asia’s culinary heritage.

Fat Fat High – A crowd favourite, this creation blends the aromatic notes of jasmine tea and yerba mate tea with the rich, savoury essence of duck fat. Finished with a dusting of bee pollen and a delicate amaranth leaf garnish, it offers a flavour profile that is both indulgent and refreshing. The addition of tequila provides a spirited kick, making this cocktail a true exploration of contrasts.

Warm Cloud – This one is for all matcha and bourbon lovers out there. This concoction blends earthy Matcha tea with rich, caramel undertones of Woodford Bourbon, paired with the bright, zesty notes of kaffir lime leaf, lemon, and ginger, and topped with a delicate sencha tea foam.

Smokey Affair – A smoky and earthy masterpiece, this cocktail weaves together the bold, campfire-like essence of Lapsang tea with the umami richness of porcini mushrooms and the warm, woody notes of sandalwood. Paired with Woodford Bourbon infused with the bittersweet complexity of cacao husk, each sip reveals layers of flavour that are both grounding and intriguing.
