Discover the ‘Stories of Türkiye’, a flavourful culinary journey of fusion and refinement dishes from various regions of this beautiful country. Chef Oğuz Yilmaz, has redesigned famous and favourite dishes to evoke gastronomic memories, with bracing flavours of each Türkiye city. Chef Oğuz’s inspiration comes from his mother’s recipes and exciting journey within the country, tasting popular dishes and working with many local chefs and culinary experts. There is so much to discover in the stories behind this fantastic cuisine.

The journey begins with amusing appetisers, starting from ‘Grape Leaf Dolma’ – grape leaf rolls stuffed with aromatic rice, raisins, fresh mint, lemon and pomegranate dressing. This healthy vegetarian menu is one of Chef Oğuz’s childhood favourite dishes that reminds him of good memories with his family. He used to collect these fresh grape leaves from his backyard garden for his mother to brine for one month and help prepare the rice stuffing with traditional spices that smells good all around the house. There are also additional flavourful healthy dishes for vegetarian lovers to enjoy from ‘Stuffed Eggplant’ – soft-baked eggplant, roasted tomato and bell pepper relish, aromatic herbs and leaves; to ‘Carrot Tarator’ roasted and marinated carrot remoulade, Greek yoghurt, dill, pine nuts, aged cheese. The traditional ‘Turkish Meatballs’ – spiced beef and cracked wheat meatballs, pistachio, lemon, served with yoghurt sauce and Turkish chilli paste, is also
another dish which cannot be missed.

Chef Oğuz’s main-course selection of aromatic tempting delicacies includes ‘Bodrum Kebab’ – charred and sliced Wagyu beef, smoked eggplant, set yoghurt, chilli and semidried tomatoes; ‘Chicken Kebab’ – spicy charred chicken meat, lavash bread, tomato bulgur, sumac onion and grilled chilli; and ‘Manti’ – homemade dumplings filled with braised lamb, garlic yoghurt sauce, sumac, mint and chilli paste.

This fascinating journey around Türkiye ends with a selection of delicious desserts, featuring Chef Oğuz mother’s signature homemade ‘Baked Rice Pudding’ – slow-cooked milk and rice creamy pudding, vanilla and roasted hazelnuts; ‘Semolina Helva’ – semolina and pine nut Ottoman dessert, served with vanilla ice cream; and ‘Pumpkin Tahini’ – candied winter pumpkin, tahini ice cream, caramelised walnuts. Each carefully crafted dish conveys its own story and waits for fellow gourmands to experience it.
