Bangkok, 20 February 2025—Home to Bangkok’s inventive pop-up restaurants, Siam Kempinski Hotel Bangkok is thrilled to launch the first-ever culinary takeover with Singapore-star Indian Chef Pinaki Ray from Yantra Singapore, for nine exclusive dinners only, from 20 to 28 February 2025.

Celebrating India’s timeless recipes and modern culinary techniques, Chef Pinaki Ray is a master dedicated to showcasing the depth and elegance of Indian cuisine. His concept pays tribute to the vibrant legacy and gastronomic heritage of his motherland, a tradition that has flourished for over a millennium. He travels the world to refine his skills and share Indian cuisine wherever he goes. His impressive experience includes working at Raffles Singapore, Marina Bay Sands Singapore and other prestigious establishments.

The exclusive pop-up event begins with a trio of appetisers: ‘Khoi Bora’—popped multigrain rice with ginger and fennel, ‘Chaat Banarasi’—beetroot crisp with aerated yoghurt and ‘Nizam Kathi Kebab’—served with pickled quail eggs. Each dish is inspired by the rich culinary traditions of Kolkata and northern India.

Chef Pinaki’s modern culinary style continues with ‘Ema Datshi’, Bhutanese cheese and chilli soup, to warm the palate. The second course features ‘Mahi Malai Tikka’, expertly seasoned for a sophisticated flavour profile. The third dish, the Bengali-inspired ‘Lobster Chiney Kebab’, promises to deliver an exceptional taste. A palate cleanser, ‘Panch Phoron Gastrique’ is served before the main course. The main course is a highlight, offering diners a choice of three dishes: Bengali-style ‘Jhal Gosht’, featuring wagyu beef cheeks in a spiced onion sauce; ‘Chicken Butter Masala’, paired with Southern-inspired Paratha wheat bread to harmonise the flavours; or ‘Gucchi Briyani’, a lighter option made with cheese, morel mushrooms, yoghurt and fragrant Basmati rice.

To refresh the palate after six courses, diners can enjoy Chef Pinaki’s favourite, ‘Bhapa Doi’. For dessert, Chef Pinaki presents a nostalgic treat inspired by his childhood—a traditional South Indian ice cream infused with saffron, offering a delightful conclusion to the meal.

‘Chef Pinaki Ray Exclusive Pop-up in Bangkok’ is available for nine dinners, from 20 to 28 February 2025, starting from 17:00. The seven-course menu is priced at THB 4,200++ per person, extra with French wine pairing options available at THB 3,500++ per person.
