Xiamen, 25 July 2025 – Mr. Gerhard Doll, General Manager of Kempinski Hotel Xiamen, collaborates with the Chinese, Western, Japanese and Pastry Chefs to present an exclusive Summer Set Menu – a celebration of exquisite culinary artistry and innovative concept.

A native of Germany, Mr. Doll began his hospitality career in the kitchen and previously served as Executive Chef with internationally renowned hotel brands such as The Peninsula and The Ritz-Carlton. His return to the kitchen is not only a revival of his original passion for cooking but also a testament to his philosophy of leadership through craftsmanship. ‘Cuisine is a bridge that connects cultures and emotions. Through this summer menu, we aim to convey Kempinski’s commitment to quality and sincerity towards our guests,’ said Mr. Gerhard Doll.

The Summer Set Menu showcases the finest seasonal ingredients, blending Chinese, Western and Japanese culinary techniques to create a refreshing gastronomic experience. Available from 30 July to 30 August 2025 at Yue Fu Chinese Restaurant on the floor 3 of Kempinski Hotel Xiamen, it invites discerning gourmets to indulge in this exclusive dining journey.

Highlights of the Summer Set Menu

Appetiser by Western Chef Bob Shen:

Sweet Shrimp with Ossetra Caviar, Celeriac Purée and Sea Moss Gel

Imported sweet shrimp pairs beautifully with the crisp freshness of Southern Fujian sea grapes, striking a harmonious balance between delicate softness and subtle crunch.

Soup by Chinese Executive Chef Jacky Qian:

Stewed Duck Soup with Night-Blooming Jasmine and Abalone

A refined combination of local abalone, Muscovy duck and the delicate aroma of night-blooming jasmine, slow-braised to perfection for a layered, elegant sweetness that lingers on the palate.

Third Course by Japanese Chef Tony Wang:

Summer M5 Wagyu Tatar

Premium Australian M5 Wagyu beef is elevated with black truffle and a signature creamy mustard dressing for an indulgent, luxurious taste.

Fourth Course by General Manager Gerhard Doll:

Charred Salmon with Pea Purée and Chimichurri Herb Salad

Perfect temperature control achieves a caramelised, crispy crust while preserving the salmon’s natural succulence – crisp on the outside, tender on the inside.

Main Course by Chinese Executive Chef Jacky Qian:

Pan-Fried Hetian Chicken Stuffed with Pomelo and Black Fish Roe

Expertly prepared Hetian chicken with a crispy exterior, stuffed with glutinous rice and complemented by Guangdong sausage and Southern Fujian preserved vegetables. A sweet, sour and spicy dipping sauce completes the dish, awakening the senses.

Dessert by General Manager Gerhard Doll and Pastry Chef Shirley Liao:

Black Forest Cake 2.0

A contemporary interpretation of the iconic Black Forest cake – originating from the General Manager’s hometown – featuring wine-marinated cherries and dark chocolate mousse, reimagined with modern sophistication.
