Hotel Indonesia Kempinski Jakarta's celebrated chicken porridge takes centre stage. When the older generations of Indonesia visit Hotel Indonesia Kempinski Jakarta, they can’t help but ask about its venerated Bubur Ayam HI before continuing with tales of the good old days of dancing and partying the night away at the hotel’s Nirwana Supper Club in the heady days of the 1970s. A perennial Indonesian favourite, bubur ayam was not on the original menu, though. It was added in the mid-1970s by Sous Chef Bambang Sugeng after regular customers, most of them local celebrities, begged for hearty Indonesian comfort food for an early breakfast post-clubbing. And so the legend was born. This simple rice porridge, served with a turmeric broth and a large variety of Indonesian condiments, was eventually added to the menu and, in fact, became the most expensive rice porridge in the country at Rp 1,000 per bowl. At that time, the same amount of money could buy a hundred servings of bubur ayam at a standalone restaurant. Today, exactly the same Bubur Ayam HI can be enjoyed in Signatures Restaurant, the all-day-dining restaurant at Hotel Indonesia Kempinski Jakarta. In fact, to ensure its authenticity, we invited the oldest living chef in the country to come and check that the recipe is still consistent.
