Long a beloved winter delicacy, hotpot charms with the lively atmosphere of communal dining and its diverse flavor experiences. Kitchen@K presents three house-made hotpot broths, each boasting distinct regional characteristics, ensuring every palate finds its perfect match.

Bill Xu, Executive Chef hailing from Chengdu, Sichuan, brings a deep understanding of the soul of Sichuan hotpot and insists on hand-stirring the spice base. He meticulously stir-fries chili, Sichuan peppercorns, spices and other ingredients according to a unique recipe, infusing the vibrant and richly layered Sichuan Beef Tallow Spicy Broth with the irresistible allure of authentic Sichuan hotpot.

Offering a refreshing contrast, the Hainan Coconut Chicken Broth delivers a bright and clean flavor. Selected fresh Thai coconuts are cracked open on-site, and their juice is slowly simmered with butter chicken. The natural sweetness of the coconut blends seamlessly with the umami of the chicken, creating a harmonious taste.

For diners who adore the pure umami of mountain delicacies, the Matsutake Mushroom Broth is an ideal choice. Featuring seasonal fresh matsutake paired with a variety of mushrooms, it requires minimal seasoning to highlight its natural umami, offering a comforting and soothing warmth.

Beyond the signature broths, equal emphasis is placed on ingredient quality. Premium meats include Australian beef, crispy beef tripe and handmade beef tendon balls. The seafood selection is equally abundant, featuring deep-sea squid, deep-sea prawns, snow crab sticks and more.
