Ranked No. 15 on Asia’s 50 Best Restaurants 2026 and recognised as India’s Best Restaurant for five consecutive years, MASQUE is internationally renowned for redefining modern Indian cuisine through ingredient-driven storytelling, innovation and a deep respect for regional produce and culinary traditions. The restaurant was also recently honoured with the Asia’s 50 Best Restaurants Art of Hospitality Award 2026 and remains the only Indian restaurant member of the prestigious Relais & Châteaux association.
Founded within one of Mumbai’s historic textile mills, MASQUE has established a global reputation for presenting contemporary Indian cuisine through an ever-evolving tasting menu experience. Each creation reflects the diversity of India’s landscapes, seasonal ingredients, traditional cooking techniques and modern culinary expression. The restaurant works closely with local farmers, foraging communities and its own dedicated research kitchen to continuously explore and reinterpret India’s rich culinary heritage for the global dining scene.
Leading the residency is Head Chef Varun Totlani, one of India’s most recognised rising culinary talents. A graduate of The Culinary Institute of America in New York, Chef Varun joined MASQUE in 2016 as part of the restaurant’s opening team and steadily rose through the ranks before being appointed Head Chef in 2022. His culinary philosophy centres around showcasing the diversity of India’s ingredients through a contemporary perspective that bridges tradition and innovation. In 2025, Condé Nast Traveller named him ‘Chef of the Year’, while GQ recognised him among India’s ‘Most Influential Young Indians’.
