The word ‘Tuğra’ describes the Ottoman sultans’ calligraphic signature, used like a letterhead or imperial seal, and the restaurant has specially designed plates incorporating this elegant motif.

History is more than an image for Executive Chef Sezai Erdoğan, who has taken inspiration for his menu from recipes recorded in the archives of historic sites such as Topkapı Palace. Take coconut kadayıf, a popular dessert served to foreign palace visitors in the 1890s, or akıtma sakız böreği, inspired by the thin pastry that Turkmen women roll with dexterity in their homes.
