杀猪菜

杀猪菜,起源于东北的农村,每年秋收农忙之后,人们为了庆祝丰收,或过年前将家中的肥猪宰杀,制成各种菜肴,招待相邻。这就是原始的东北地方杀猪菜。黑龙江人特别喜欢杀猪菜。“杀年猪”,一般多在腊八之后,故有”小孩小孩你别哭,过了腊八就杀猪“的民谣。过去乡下一到“腊八”过年的大幕就徐徐拉开了:杀年猪,办年货……十里八村,家家户户,就连清冷的空气中,也洋溢着一股浓浓的喜庆气息。

杀猪菜其实很简单,就是满满的切上一大锅酸菜,在挑选几块上好的五花三层肉及事先灌制好的血肠一并放在锅里炖。炖好的肉块及血肠切成片和着酸菜一起端上桌。这白片肉肥而不腻,血肠浓香袭人,酸菜荤素咸宜,清脆爽口,实实惠惠,热汗津津的吃上一顿,一年的清苦似乎全部抵消了。
