Pork cubes wok fried with leek, fungus, onions and a homemade ginger-soya sauce, accompanied with fresh cut Shanxi noodles with tomato and egg.
Especially in northern and central China, where winters are cold and long, various types of pork specialities are very popular. The pork cubes are marinated with ginger, soya sauce, onions and garlic. They will then rest for 24 hours to adopt the flavour and to become very tender. Just before serving, they will be wok fried together with the marinade.
The handmade Shanxi noodles have an over 600 years history and are the most famous dish in the province. The skills to cut the noodles fresh from the dough direct into the boiling water is passed from generation to generation. They cooked fresh before serving and finished with a simple but very fresh tomato and scrambled egg sauce, nested in the middle of the noodles and topped with black fungus.
