Perch fillets, a typical local dish, are always a touchy subject: they are not easy to get from Lake Geneva. But through sheer perseverance, our Executive Chef, James Norman, reached an agreement with one of the last local fishermen to supply the hotel with the hard to come by fish. Now Le Grill Restaurant is proud to present its Signature dish: authentic perch fillets from Lake Geneva. No less than 50 kg of fresh perch are caught each week to meet the demand.
Our General Manager, Thierry Lavalley a true epicure, has tried the dish and declared it a success. Each Kempinski Hotel’s General Manager will present his/her Signature dish during the preamble to the Career Day 28 February in Munich. « Our aim is to make our culinary offerings the high 1 point of our identity by standing out with creativity, ingenuity and quality. »
