AL SUFRA'S CHICKEN MAKLOUBEH
A masterpiece creation inspired by the traditional upside down dish from Palestine and Jordan
Chicken makloubeh, the classic Middle Eastern culinary favourite served at Al Sufra, has established itself as the restaurant’s must-have dish. Variations of the dish can be found across the Levant region. The hotel's signature interpretation originates from Palestine and Jordan.
Makloubeh means upside-down in Arabic, referring to the presentation of the dish when served. Chicken makloubeh is made by combining succulent chicken and fresh vegetables including eggplant, cauliflower and potatoes. The ingredients are mixed together with spices and short grain rice in a large pot, placed and cooked layer upon layer, creating a deliciously textured and flavoured gastronomic feast.
Once the Chicken makloubeh has been cooked to perfection, it is turned upside-down in front of the guests, ready to be devoured. It’s served with Arabic yoghurt, roasted pine nuts and parsley for added crunch and earthiness.
