Christmas Eve | 24 Dezember 2016

  • Roulade of salmon and canadian lobster under potato-sesame-network on peas salad with red caviar
  • Foam soup of beetroot with baked domino of piglet cheeks coated in herbs
  • Tart of zander and salmon with fried scallop on lemongrass foam
  • Duet of duck and deer on roasted salsify with truffle almonds stars and romanesco-tart with pumpernickel
  • Caramelized honey cake with mandarin-sour cream-ice

1 Christmas Day | 25 December 2016

  • Pâté of trout and char on a pineapple and pumpkin mosaic with smoked prawn
  • Essence of deer and fawn with baked pigeon-petit-four in pumpkin seed coat
  • Baked salmon in herb puff pastry with lime and coriander
  • Brandenburg country duck on cranberry red cabbage with potato-maron-dumplings
  • Florentine-ice cream cake with cranberry-orange

2 Christmas Day | 26 December 2016

  • Tart of duck and walnuts with rum sauce and raisins
  • Pot au feu goose giblets with baked prune
  • Ragout of shellfish with tarragon sauce
  • Spice crusted venison with baked romanesco balls
  • Tart of macadamia and nuts with espresso ice-cream
