Executive Chef Christophe Laplaza invites guests to Bellevue Brasserie to experience a real gastronomic journey for food lovers. He has completely updated the restaurant menu and filled it with dishes that have been prepared for centuries in some of the French provinces.
For example, the recipe for Cheek of beef, a la “Bourguignon”, is taken from Burgundy. Nem of goat cheese and prunes with sweet bacon-paprika sauce will be prepared in the way it has been cooked in Auvergne. Ragout of crayfish and forest mushrooms is a gift from Franche-Comté, which is a native region for Chef Laplaza. "This dish means a lot to me," said Christophe. "My mom got this recipe from our grandmother and handed it to me. I want to share it with our guests."
Escalope “Normande” of chicken in a crust of walnuts with wild rice and morel sauce will be prepared at the Bellevue Brasserie based on a traditional recipe from Normandy. The secret of cooking Pan-fried foie gras with quince and grapefruit is taken from the Landes in Aquitaine. Creamy pumpkin soup will be made from a favorite recipe from across the country.
Bellevue Brasserie’s dessert list presents new dishes as well. Along with the classic French pastry in the style of "Paris-Brest" and sorbets with tastes of sour cream, apple and passion fruit, guests can enjoy Red Cube Kempinski. It’s a new chef’s creation inspired by the masterpieces of modern art. Chef Laplaza recommends trying all the dishes on the new Bellevue Brasserie menu because each of them is unique and represents the culture and history of the country, world famous for its passion for excellent cuisine.
