Andy's Culinary Book: Trout tartar with sour cream and capers on crispy bread garnished with avocado-potato mousse

Unexpected guests have just called saying that they are coming in half an hour. How to welcome them with something elegant prepared in minutes?

Why not with a delicious fish starter (which under different circumstances can mark the successful beginning of a light lunch or dinner).

You will need:

  • Smoked trout - 125 gr 
  • Capers - 6-8 pieces 
  • Sour cream - 40 gr 
  • Cucumber - 40 gr 
  • Toast 
  • Soft avocado - 30-40 gr 
  • Boiled potato - 30-40 gr 
  • Mayonnaise 
  • Red caviar 
  • Olive paste 
  • Dill 
  • Lemon juice 
  • Mixed green salads and sprouts 
  • Salt 

Here is the preparation process in several fast and easy steps:

Cut the smoked trout and the cucumber into cubes, then add the sour cream, dill, salt and a drop of lemon juice.

Use a blender to grind finely the soft avocado, boiled potato and mayonnaise. Do not forget to put a drop of lemon juice - this will keep the avocado fresh and prevent it from darkening quickly.

Toast the bread until it becomes deliciously crispy and cut a small round shape. Put the tartar on top and garnish with seasonal green salads and sprouts. Put avocado-potato mousse around the tartar, then add the red caviar and the olive paste.

The bell is ringing, the guests are at the door. Do not forget to serve your skilfully prepared creation with wine, well cooled and tantalizing the senses!
