Michelin Starred Chef Mattias Roock as Executive Chef at Grand Kempinski Hotel Shanghai

                                                                 

 

A master of French and Italian cuisine, Chef Mattias Roock brings his culinary talents to Shanghai as the Executive Chef of Grand Kempinski Hotel Shanghai, overseeing all the restaurant outlets in the Hotel and guiding a team of 130 employees.
Prior to joining Grand Kempinski Hotel Shanghai, Chef Mattias presided over the restaurants at Kempinski Grand Hotel Des Bains by following his career motto “quality of food over everything”.  He was quickly promoted from Sous chef to Executive chef in three years, leading the Hotel’s Restaurant Cà d'Oro to gain 17 Gault Millau points and become a Michelin starred restaurant.  Earlier experience includes time working at the 5-star Hotel Giardino in Ascona, followed by a year in London at the Gordon Ramsey Restaurant Claridge’s, London. 
Born in 1980, Chef Mattias was once the youngest chef in the Kempinski Hotels Group.  Chef Mattias undertook a thorough apprenticeship at Hotel Atlantic Kempinski Hamburg from the age of 16 where his expertise was quickly recognised having excelled in various culinary competitions, and achieving German “Master Chef" at the young age of 23. 
Signature dishes highlighted from the Acqua menu at Grand Kempinski Hotel Shanghai include Spicy Tuna Tartar (yellow fin Tuna tartar with Piment d'Espelette and sea salt),  Acqua‘s Lobster Ravioli (Lobster Ravioli with Japanese lime mountain pepper, sugar peas and Kashmir Curry crustacean sauce) and Panna Cotta (incorporating the unique Tonka bean).
